Tucked away in the village of Rochefort-sur-Loire, just south of the town of Savennieres is Domaine des Baumard. Founded by the Baumard family in 1634, the estate is considered a reference point for Savennieres and the sweet wines of Coteaux du Layon. Currently managed by the third generation of the family, Florent farms in an organic manner and believes in minimal intervention in the vineyard and in the cellar. Yields are kept low (generally 1.5 -2.5 tons per acre) and the grapes are hand-harvested and pressed as quickly as possible to preserve freshness and aroma. Starting with the 2005 vintage, Florent bottled all of his wines (except the Cremant) with Stelvin closures. “Florent Baumard is a brilliant winemaker. The Savennieres is a dry, honeyed white of unmatched concentration, perfume and longevity.

I tasted the Baumard 2009 Savennieres as an approximation to its final shape, since some of the lots that either had not – or had only partly – undergone malo-lactic fermentation might well evolve further in that direction before the wine is bottled in September. At this early stage, the overall impression is soft and not especially focused, but there is compensatory richness of quince and pear fruit, nut oil richness, alluring creaminess of texture, and lily-of-the-valley-the-valley and iris floral perfume that wafts all the way through a sustained, wet stone-underlain finish. A hint of fresh lime serves for some sense of refreshment despite the wine’s overall softness, and as with the 2008, I sense less bitterness and greater buoyancy than in vintages a few years past. I suspect though that this will be best enjoyed during its first 2-3 years of bottled life.

To harvest this wine, successive passes are made through the vines to get the ripest grapes. The result is a rounded, very rich wine, whose ripe fruits are right up front. There is some caramel and bitter almond, with a smooth final texture. It has weight and a good future over 3-5 years. Screwcap.

Beautifully pure, with salted butter, chamomile and quinine notes lacing up a core of creamed Jonagold apple and lanolin flavors. The long, creamy finish lets the chamomile edge play out elegantly. Drink now through 2018.—J.M.

Technical notes
The fruit is sourced from two two lieux-dits, the Clos du Papillon and the Clos St. Yves. Soils are primarily schist and the vines are trained in the vignes hautes et larges (VHL) model. Grapes were hand-picked and pressed before fermentation in temperature controlled steel tanks. Like his father Jean, Florent does not actively encourage nor discourage malolactic fermentation.
