Wine maker notes
Grapes are destemmed and crushed into stainless steel fermenters, where especially selected yeast is used. Fermentation takes place at temperatures between 72 and 75°F. The remontage, consisting of a mix of delastage (rack and return) and traditional pump overs, helps soften the tannins. There is no post fermentation maceration and the wines is fermented to just before “dryness” in order to maintain fruit concentration. Maturation then takes place in barriques.
