Pazo Torrado was founded by in 2007 by a top local growers cooperative called Terra de Asorei. Comprised of eight members, each of whom own vineyards in the Salnes Valley of Rias Baixas, Spain, Terra de Asoris farms an area of 173 acres. The vines are 15 years old on average and are planted at an elevation of 328 feet on sandy soils. Located in the village of Cambados, Pazzo Torado was built in the second half of the 18th century and later was converted into the Galician “Museum of the Wine Routes”. Pazo is a name for manor house in Galician.
|The grapes were destemmed, gently crushed and decanted for 24 hours prior to fermentation in stainless steel tanks. After fermentation, the wine is racked off its gross lees, cold stabilized, filtered and bottled.
